Yes There's A Zucchini In This Chocolate Cake Recipe
I made zucchini chocolate cake. I love chocolate anything, and since I like baking often, I thought it'd be a good idea to have a healthier chocolate cake recipe around.
I couldn't tell at all that there was zucchini in there! I gave Tai my 12-year-old picky eater a piece, and he ate it and liked it. The next day he had another piece and then asked for a second piece. That's when I told him there was zucchini in it. He didn't believe me. Either he's just in denial or he thinks I'm lying.
I got him to eat zucchini and guys I haven't been able to do that in twelve years! I'll take that as a win. Maybe I'll try avocado brownies next!
Ingredients
1/2 cup vegetable oil or applesauce
1 1/4 cups of sugar
2 tsp vanilla extract
2 cups of flour
8 TBS unsweetened cocoa powder
1 1/2 tsp baking soda
1 tsp salt
2 cups shredded zucchini it's about 2 small-medium sized zucchinis
1 cup of chocolate chips
1 TBS powdered sugar
Directions
Preheat over to 350
Mix oil, sugar, vanilla in one bowl
Mix flour, cocoa, baking soda, salt in another bowl
mix both together it will seem dry but that's the way it is
fold in zucchini it will kind of look like brownie batter
spread in greased pan 9X13 inch pan
sprinkle with chocolate chips, powdered sugar, or frost it with your favorite frosting. I've used Pioneer Woman's chocolate frosting from her sheet cake once.
bake 25 minutes
