This week we found out that Mr. IrvingSpoon has Celiac Disease. The short explanation of what that means is no more gluten for him.

So, this is where I start learning how to cook and bake Gluten Free. I’m hoping to be able to pull it off in a delicious way. I don’t want to eat a GF chocolate chip cookie that looks like a cookie but tastes like a flip flop. I assume flip flops taste bad. 

This week I'm going to try to make my enchilada recipe with Pillsbury Gluten Free Multipurpose Flour Blend. I hope it turns out okay!
